for 1 cake:
- 250 gr. flour (self-raising or regular, but then you have to add baking powder)
- 250 gr. granulated sugar
- 250 gr. soft butter
- 4 eggs
Place the butter in a bowl and stir gently . Add the eggs 1 at a time, making vigorous movements. Add the sugar and the sifted flour. Mix vigorously so that the dough becomes airy. Put this in a greased baking tin and put in the preheated oven at 180°C for an hour.
Insert an awl into the cake at the end of the baking time, if it comes out dry, the cake is done. Do not open the oven during the first 45 minutes of the baking time, otherwise the cake will collapse. With a few drops of Kirsh essence you give your cake a special touch.
Marble Cake :
Proceed in the same way, mix half of the batter with 20 gr. cocoa powder, add to the other dough and mix with a spoon, so that you get a marble structure. You can also work with 3 colours: eg by mixing a third of the dough with a few drops of red food coloring.
Chocolate cake with candied orange pieces :
Prepare the batter in the same way, but add 40 gr. cocoa powder and mix in pieces of candied orange. Possibly a few drops of Mandarine de Napoleon or Cointreau.
